Freezer PIe Class

We had a yummy Freezer Pie demonstration and flower arranging class on July 15th. Recipes are coming. and will be posted at the bottom of the blog. Thanks to everyone who participated from teachers to the eaters!

Chocolate Lasagne from RS Activity May 16, 2013

INGREDIENTS
1 package regular Oreo cookies (Not Double Stuff) – about 36 cookies
6 Tablespoon butter, melted
1- 8 ounce package cream cheese, softened
1/4 cup granulated sugar
2 Tablespoons cold milk1- 12 ounce tub Cool Whip, divided
2 – 3.9 ounce packages Chocolate Instant Pudding.
3 1/4 cups cold milk1 and 1/2 cups mini chocolate chips
DIRECTIONS
1. Begin by crushing 36 Oreo cookies. I used my food processor for this, but you could also place them in a large ziplock bag and crush them with a rolling pin. When the Oreos have turned into fine crumbs, you are done.
2. Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs. When the butter is distributed, transfer the mixture to a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan. Place the pan in the refrigerator while you work on the additional layers.
3. Mix the cream cheese with a mixer until light and fluffy. Add in 2 Tablespoons of milk, and sugar, and mix well. Stir in 1 and 1/4 cups Cool Whip. Spread this mixture over the crust.
4. In a bowl, combine chocolate instant pudding with 3 and 1/4 cups cold milk. Whisk for several minutes until the pudding starts to thicken. Use a spatula to spread the mixture over the previous cream cheese layer. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further.
5. Spread the remaining Cool Whip over the top. Sprinkle mini chocolate chips evenly over the top. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.

Rasberry Chocolate Supremes

Crust:
1 cup flour
1/4 cup powdered sugar
2 cup margarine or butter

Filling:
2 cup raspberry jam
3-oz. Pkg. Cream of cheese softened
2 tablespoons milk
1 cup vanilla milk chips, melted.

Glaze:
2 oz (2 squares) semi-sweet Chocolate, cut into pieces
1 tablespoon shortening.

Heat oven to 375 degrees F. Place flour into med. bowl, combine flour & powdered sugar. Using pastry blender, or fork, cut in butter until crumbly. Press in ungreased 9 inch sq.. Pan. Bake at 375 degrees for 15-17min. Or until lightly browned. Spread jam evenly over baked curst. In small bowl, beat cream cheese & milk until smooth, Add melted vanilla chips to cream cheese mixture; beat until smooth. Drop cream cheese mixture by teaspoons evenly over jam carefully spread to cover. Refrigerate until set.

In small saucepan over low heat, melt glaze ingredients, stirring constantly.

Spread over filling. Cool completely. Cut into bars. Storein refrigerator. 25 bars.

BOTTLED MEAT RECIPES FROM LINDA P

Use just turkey breasts. Thaw. Cut the two sides of breast off (save the rest). Cut breast meat into pieces to fit into half pints or pints. Add ½ teaspoon salt to half pints and 1 teaspoon salt to pints. Then pack meat into bottles to within ½ inch of top. Don’t add any liquid, it will make it’s own juice. Put lids on the pressure for 75 minutes at 10 #’s pressure for pints and half pints.Depending on size of turkey breast one will fill 3 to 4 pints ( or 7 to 8 half pints).

Soup StockUse the bones from turkey breasts, put them in a large pan and cover with water. Add a large onion and a few stalks of celery. Boil until the meat falls off the bones. Put a hand full of meat in a quart jar with 1 rounded teaspoon of chicken bouillon. Strain the juice and fill the bottle to within 1 inch of the top. Seal and pressure 25 minutes at 10 #’s.Bottled

Elk or Deer I do it the same way as I do the turkey except that I use beef bouillon in place of the salt.

Dry Beans1 1/3 cup dry beans1 tsp. saltBoiling water.Put beans and salt in quart jar. Fill with the boiling water to 1 inch of the top, seal.Process in a pressure cooker. Pour 2 quarts of water in bottom of pressure cooker.Put jars in lock in pressure cooker and process 90 minutes at 12 #’s of pressure.

Bottled Cheese I buy the gallon cans of cheddar or Nacho cheese (at Sam’s Club)Fill pints or half pints to within ½ inch of top. Seal and water bath for 20 minutes.

CROCKPOT CREAM CHEESE CHICKEN - Senia
4-6
Boneless chicken breasts (can cut into chunks before cooking) 3 Tbsp. butter
Salt and pepper to taste
8 oz. cream cheese
1 pkg. dry Italian dressing mix
2 cans cream of chicken soup
3 cloves garlic minced
Mix together and cook on medium heat for 4-6 hrs.Serve over rice

BROCCOLI CHEESE SOUP -Bridjett
2 cups sliced fresh carrots
1 cup sliced celery
2 cups broccoli florets
1-1/2 cup chopped onion
2 cup butter
1/4 cup flour
1 can (10-12 oz.) Chicken broth
1 quart milk
2 pound process American cheese, cut into cubes.
In a larger sauce pan, bring 2 quarts water to a boil. Add carrots, celery and broccoli;cover and boil for 5 minutes. Drain & set aside. In the same saucepan,saute onion in butter. Add flour and stir to make a smooth paste.Gradually add chicken broth & milk. Cook until mixture thickens, about 8-10 minutes.Add vegetables; heat until tender. Add cheese; heat until cheese is melted.Yield: 6-8 servings ( 2 quarts)

Mix Together
3eggs
1 cup oil
2 cups sugar
Mix- then add:
2 cups grated peeled zucchini
3 cups flour
1 small can crushed pineapple
3/4 cup chopped nuts
1tsp salt
1tsp soda
1tsp pumpkin pie spice
2 tsp cinnamon
1 cup chocolate chips
Pour into greased 9x13 pan
Bake 350 degrees for 40-45 min.This freezes well!!!

Linda's P. Bread Recipe (Used at Bread Enrichment Day)
4 C. warm water
½ C. Sugar
2 Tablespoons yeast
2 Tablespoons Salt
½ C. Melted Shortening
10 C. Flour
Mix water and sugar. Dump out ½ C. sugar water into bowl and add yeast. In the rest of the water add salt and shortening. Add yeast water and 8 Cups flour. Mix with spoon then add 2 more Cups flour. Mix by hand until smooth. Let dough raise to double in size. Divide into 4 pieces. Shape into loaves and let raise In pans. Bake 375 for 20 – 25 min. Remove from oven and brush tops of loaves with butter. Remove from pans and let cool.Honey Butter1 1/3 C. Honey 1 egg yoke1 cube marg. 1 cube butter

TURKEY CASSEROLE (Jerrie G.)
½ cup butter
¾ cup flour
6 cups turkey broth
Cream or milk
Cook for 5 minutes. Slowly add 4 beaten eggs, stirring constantly. Cook for 2 more minutes. Remove from heat.
Prepare 2 boxes Stove Top Stuffing according to directions.
Layer ½ of stuffing, left-over turkey, ½ of gravy mixture then repeat the layers. Cover with seasoned bread crumbs and bake at 350 degrees for 1 hour.

LEMONADE PIE (Deon C.)
1 ½ pkg graham crackers (crushed with 1 cube butter)
Mix and put in bottom of 13 x 9 pan. Bake at 375 for 10 minutes. Cool
Fill with mixture of:
1 large Kool Whip
½ can frozen lemonade
1 can sweetened condensed milk
Mix together, pour into crust and top with graham cracker crumbs.

ONE CUP FLOUR RECIPES

Tortilla recipe from Deona G. 4 1/2 cups flour

2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 cup shortening
1 1/4 cups hot water
Mix flour, baking powder, salt, and shortening together until blended. Add hot water and mix until dough is not stiff but not wet. Make balls (about 1/2 cup each ball). Roll in circle and cook on cast iron griddle until bubbley and turn and cook until done.
CRANBERRY WALNUT OATMEAL COOKIES

3/4 Cup crisco butterflavor vegetale shortening
3/4 cup sugar
3/4 cup firmly packed brown sugar
2 lg. eggs
2 tsp. vanilla extract
1 cup flour
1tsp. baking soda
1 tsp. cinnamon
1/4 teas. salt
2 3/4 cups old-fashioned rolled oatmeal
1 cup sweetened dried ctanberries
1 cup walnuts
Heat oven to 350 degrees.
Coat baking sheets with no-stick cooking spray. Beat shortening, sugar and brown sugar in lg. bowl at medium speed until blended. Beat in eggs & vanilla. Combine flour,
baking soda, cinnamon and salt is small bowl. Beat into shortening mixture until smooth. Stir in oats, dried cranberries and walnuts. Drop rounded tablesoonfuls about 2 inches apart on baking sheet. B ake 10-12 minutes or until light brown. Cool on baking sheets 2 min. Remove cookies to wire rack to cool completely.
LEMON SQUARES

1 cup flour
1/2 cup butter or margine
1/4 cup confecioners' sugar
2 eggs
1 cup granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt2 tbsp. lemon juice
Heat oven to 350 degrees.
Blend flour, butter & confectioners' sugar thoroughly. Press evenly in 8x8x2" pan, building up 1/2 in. edge. Bake 20 min. Beat rest of ingredients together. Pour over crust & bake 25 min. more or just until no imprints remains when touched lightly in center. makes 25 squares.

Sixty Uses for Baking Soda
Bicarbonate of soda or baking soda has many different uses in the household. Although much more expensive products have been developed over the years to do the same jobs, baking soda can work for you just as well, if not better. Use it in the following ways:
1. To make your own baking powder, stir and sift together 2 parts of Cream of Tartar to 1 part baking soda and 1 part cornstarch.
2. Be sure to keep an extra box of baking soda by your stove in case of grease or electrical fire. Scatter the powder by the handful to safely put it out.
3. Keep a container of baking soda in your garage as well as in your car to put out a fire. It won't damage anything it touches.
4. Baking soda will also put out fires in clothing, fuel, wood, upholstery and rugs.
5. Clean vegetables and fruit with baking soda. Sprinkle in water, soak and rise the produce.
6. Wash garbage cans with baking soda.
7. Soak and wash diapers with baking soda.
8. Oil and grease - stained clothing washes out better with soda added to the washing water.
9. Clean your fridge and freezer with dry soda sprinkled on a damp cloth. rinse with clear water.
10. Deodorize your fridge and freezer by putting in an open container of baking soda to absorb odors. Stir and turn over the soda from time to time. Replace every 2 months.
11. Soda absorbs kitty litter odors. Cover the bottom of the kitty box with 1 part soda; then add a layer of 3 parts kitty litter on top.
12. Always add 1/2 cup soda to your washing machine load.
13. Clean combs and brushes in a soda solution.
14. Wash food and drink containers with soda and water.
15. Wash marble-topped furniture with a solution of 3 tablespoons of soda in 1 quart of warm water. Let stand awhile, then rinse.
16. Clean formica counter tops with baking soda on a damp sponge.
17. Wash out thermos bottles and cooling containers with soda and water to get rid of stale smells.
18. To remove stubborn stains from marble, formica or plastic surfaces, scour with a paste of soda and water.
19. Wash glass or stainless steel coffee pots (but not aluminum) in a soda solution ( 3 tbsp. soda to 1 quart water).
20. Run your coffee maker through its cycle with a soda solution. Rinse.
21. Give baby bottles a good cleaning with soda and hot water.
22. Sprinkle soda on barbecue grills, let soak, then rinse off.
23. Sprinkle soda on greasy garage floor. Let stand, scrub and rinse.
24. Polish silverware with dry soda on a damp cloth. Rub, rinse and dry.
25. For silver pieces without raised patterns or cemented-on handles: place the silver on aluminum foil in an enamel pot. Add boiling water and 4 tbsp. baking soda. Let stand, rinse and dry.
26. Reduce odor build-up in your dishwasher by sprinkling some soda on the bottom.
27. Run your dishwasher through its cycle with soda in it instead of soap to give it a good cleaning.
28. To remove burned-on food from a pan: let the pan soak in soda and water for 10 minutes before washing. Or scrub the pot with dry soda and a moist scouring pad.
29. For a badly-burned pan with a thick layer of burned-on food: pour a thick layer of soda directly onto the bottom of the pan, then sprinkle on just enough water so as to moisten the soda. Leave the pot overnight, then scrub it clean next day.
30. Rub stainless steel and chrome with a moist cloth and dry baking soda to shine it up. Rinse and dry. On stainless steel, scrub in the direction of the grain.
31. Clean plastic, porcelain and glass with dry soda on a damp cloth. Rinse and dry.
32. Remove that bad smell from ashtrays with soda and water.
33. Sprinkle a bit of dry soda in your ashtrays to prevent smoldering and reduce odor.
34. Clean your bathroom with dry soda on a moist sponge - sink, tub, tiles, shower stall, etc.
35. Keep your drains clean and free-flowing by putting 4 tablespoons of soda in them each week. Flush the soda down with hot water.
36. Soak your shower curtains in water and soda to clean them.
37. To remove strong odors from your hands, wet your hands and rub them hard with soda, then rinse.
38. Sprinkle baking soda on your wet toothbrush and brush your teeth and dentures with it.
39. Sprinkle soda in tennis shoes, socks, boots and slippers
to eliminate odor.
40. Add 1/2 cups or more of baking soda to your bath water to soften your skin
.41. Putting 2 tbsp. of baking soda in your baby's bath water will help relieve diaper rash irritations.
42. Apply soda directly to insect bites, rashes and poison ivy to relieve discomfort. Make a paste with water.
43. Take a soda bath to relieve general skin irritations such as measles and chicken pox.
44. Take 1/2 teaspoon of baking soda in 1/2 glass of water to relieve acid indigestion or heartburn.
45. Gargle with 1/2 tsp. baking soda in 1/2 glass of water. Freshens and cleans your mouth.
46. Used as a mouthwash, baking soda will also relieve canker sore pain.
47. To relieve sunburn: use a paste of baking soda and water.
48. Bug bites: use a poultice of baking soda and vinegar.
49. Bee sting: use a poultice of baking soda and water.
50. Windburns: moisten some baking soda and apply directly.
51. Making Play Clay with baking soda: combine 1 1/4 cups water, 2 cups soda, 1 cup cornstarch.
52. Use soda as an underarm deodorant.
53. If your baby spits up on his shirt after feeding, moisten a cloth, dip it in baking soda and dab at the dribbled shirt. Tho odor will go away.
54. When scalding a chicken, add 1 tsp. of soda to the boiling water. The feathers will come off easier and flesh will be clean and white.
55. Repel rain from windshield. Put gobs of baking soda on a dampened cloth and wipe windows inside and out.
56. Add to water to soak dried beans to make them more digestible.
57. Add to water to remove the "gamey" taste from wild game.
58. Use to sweeten sour dishcloths.
59. Use dry with a small brush to rub canvas handbags clean.
60. Use to remove melted plastic bread wrapper from toaster. Dampen cloth and make a mild abrasive with baking soda.

DEPRESSION ERA RECIPES

MAIN DISH - Poor Man's Soup
1 soup bone1 cup dry beans2 cup tomatoes1 cup chopped celery1 cup diced potatoes1/2 cup rice1/3 cup gound beef1/3 cup chopped onionsalt and pepper1/8 tsp basilSoak beans over ight and drain.Simmer soup bone in 8 qts of water for several house. Add drained beans and simmer for 45 minutes. Fry beef and onion. Add to soup along with remaining ingredients and simmer for one hour. Serve with bisquits.

BREAKFAST - Pancakes From Scratch
1 cup flour1 tablespoon sugar2 teaspoons baking powder1/4 teaspoon salt1 beaten egg1 cup milk2 tablespoons cooking oilStir tegther dry ingredients. Make a well and add wet ingredients. Mix til moistened. Cook on hot griddle or skillet.Makes 8-10 starde sized pancakes.Serve with Applesauce or homemade berry jam, jelly or syrup.

BREAD - Baking Powder Bisquits
2 cups flour4 tsp. baking powder1 tsp. salt2 Tbls lard (shortening, butter etc.)1 cup milkSift dry ingredients together. Cut in lard and add milk gradually. Mix to a smooth dough. Roll to 1/2 inch thickness. Cut with bisquit cutter (or cup). Place on cookie sheet. Bake in quick oven. (400* for 8-10 mins).

DESSERT - Vintage WW1 Eggless, Milkless, Butterless Cake
1 cup water2 cups raisins (Opt)1 tsp. cinnamon1/2 tsp. cloves1 cup brown sugar1/3 cup lard (shortening)1/4 tsp. nutmeg1/4 tsp. salt2 cups flour1 tsp. baking soda1/2 tsp. baking powderPlace water, raisins, cinnamon, cloves, brown sugar, lard (shortening), nutmeg and salt in a saucepan and mix. Place on heat and bring to a boil. Cook 3 minutes. Allow to cool, then sift together the flour, baking soda and baking powder. Stir into cooked mixture.Place in a greased loaf pan and bake at 350F for one hour.

Grandma's Brown Sugar Fudge
An old family recipe passed down for generations.Ingredients4 cups brown sugar, packed1 (12 ounce) can evaporated milk2 tablespoons butter1 teaspoon vanillaDirectionsCombine brown sugar & milk in saucepan, and stir until the sugar begins to dissolve.Cook over medium-high heat until mixture reaches the “soft ball” stage (about 235 degrees).Remove from heat, and add butter & vanilla.Mix until smooth & creamy. Fudge will lose its shine and feel somewhat gritty on the bottom of the pot.Pour into buttered 9 x 13 glass pan.Let partially set and cut into squares.
